Eggplant and Mushroom Sandwiches

Transfer the mixture to a pre-heated pan and fry over medium heat for 2-3 minutes until the squid is ready. It is important not to overdo it: they may become too hard.
On the bread lay out the rings of tomatoes and squid. Add salt and pepper to taste and serve immediately.
