Shrimp: Pumpkin Soup
As part of the “Product of the Month” column, we decided to study shrimps and each week of April we will publish a recipe with them. TO KNOW THE PROPORTIONS OF EACH INGREDIENT, FIND THE CURSOR ON A PICTURE.
Pumpkin soup with shrimps
Cooking method:
Baked pepper in the oven at high temperature to black tan; cut the pumpkin into large pieces and bake until soft.
Cut carrots into large cubes and simmer until soft.
Saute the onions in a pan with chopped ginger and chili for 3-5 minutes.
Shrimp clean and free from veins. Heads and shells of shrimp throw into the water, cook broth from them - it will take 20-30 minutes - and strain it.
Blender puree pumpkin, pepper, carrot, onion, add broth and salt (it can be replaced with fish sauce), mix everything. Add shrimp.
Soup in plates can be sprinkled with black sesame and crumbled nori.
