For giving or picnic: 7 simple and quick recipes

May holidays for the second time please long weekend; many will spend them in the country or at least get out of town for a picnic one day. We talked about the importance of not forgetting sunscreen, mosquito repellent and chargers, and it's better to replace a fat kebab with something lighter. In today's selection - seven simple and healthy dishes for dining in nature, the preparation of each of which should not take more than a quarter of an hour.

Vegetable kebab

Our recipe includes corn, champignons, sweet peppers, and onions, but any vegetables are suitable: broccoli or cauliflower blossoms, Brussels sprouts, coarsely squash, or cherry tomatoes. Fast cooking method allows you to preserve the taste of vegetables, leaving them juicy and crispy.

Cut the mushrooms into halves, cut the corn into large rings, onion and pepper into several large pieces.

In a bowl, mix olive oil, finely chopped parsley and garlic, lemon juice, cumin, salt and pepper. Add the mixture to the vegetables and mix well.

Put vegetables on skewers or wooden sticks and bake on the grill until cooked, often turning over (5-7 minutes).

Grilled corn with chili and lime

Fresh corn is often forgotten - many of us ate it last time as a child when we went to the sea with our parents; at the same time, it cooks very quickly on the grill, and the hot pepper and lime juice give the corn an exotic flavor, reminiscent of traveling either to Thailand or to Mexico.

In a bowl, mix the olive oil, juice and lime zest, cheese, paprika and chili.

Culinary brush or hand apply the mixture to the corn and fry on the grill for 10-12 minutes, often turning.

Grilled prawns and mussels skewers

Both shrimps and mussels on the grill are cooked in minutes, but these minutes are just enough to make a very simple avocado cream sauce.

Grind lemongrass, chilli, ginger, sugar and fish sauce in the processor to a thick paste.

In a deep bowl, mix the resulting paste and vegetable oil. Add shrimp and mix well.

Strung on skewers or wooden sticks and bake on the grill until cooked, often turning over (5-7 minutes).

Wash the mussels, spread them out on the grill grill with one layer, and put two lemon halves next to it. Bake until the mussels open and the lemons darken.

Put the mussels and shrimps on a plate, pepper and squeeze the juice from the baked lemons.

Lime and Avocado Sauce

This sauce can be used with different fish and chicken dishes, and mixed with pasta - and in this case grilled shrimps can be dipped in it.

Peel avocados, salt and pepper in a bowl, mash with a fork until smooth.

Squeeze the juice of one lime into the resulting cream, add sour cream and mix well.

Store in the refrigerator until serving.

Couscous salad with chickpeas and vegetables

Couscous (tiny balls of cereal originally from Morocco, which are made from solid varieties of wheat, millet, barley or rice) - an excellent option for a side dish that does not require long cooking. Always follow the instructions on the package, but usually you need to add a little olive oil and salt to dry couscous and pour boiling water on it, cover with a saucer and leave for a few minutes.

Prepare couscous according to package instructions.

Cut pepper, cucumber, tomato and feta into small cubes. Mix with chopped onion rings and parsley.

In a deep bowl, mix the couscous with vegetables and cheese, add chickpeas, lemon juice, pour with olive oil, add salt and pepper and mix well.

Raw Beetroot, Feta Cheese and Pear Salad

Beetroot is usually associated with "winter" salads, which require cooking vegetables and long cooking, but in its raw form, it is no less tasty and much healthier.

Beets and pears rinse well and grate with a grater, mix in a bowl.

Squeeze lemon into a bowl, add olive oil, salt and pepper, mix well.

Arrange the salad on plates, sprinkle with chopped feta cheese, mint leaves and sunflower seeds.

Berry ice cream

Homemade ice cream is a dish that will not take more than 15 minutes to cook, only to spend them a day before a picnic.

All ingredients are mixed in a blender until smooth and put in plastic molds, insert sticks and put into the freezer. To make ice cream easy to pull out of a plastic mold, you can substitute it for a few seconds under a stream of hot water.
