Twelve years ago, the Dane Rene Redzepi founded the restaurant Noma, which used exclusively Scandinavian products, thereby introducing fashion for a new Nordic cuisine. Redzepi cuisine is far from vegan. Dane is happy to cook all sorts of meat - from game to rare seafood - and among the publications in instagram there is a video of baked pork and photos of kitchen workers for plucking bird carcasses. Nevertheless, Redzepi professes the principles of humane animal husbandry and is of keen interest among fellow chefs and amateur cooks. The chef skillfully deals with such inedible plants like moss, foliage or tree bark, and in his instagram he documents the path of natural ingredients from around the world to the professional kitchen. In 2017, after updating the Noma concept, the restaurant will have its own farm, as well as a school, a playground, and even autonomous eco-friendly energy sources. In general, Rene Redzepi develops the kitchen of the future in word and deed.
