Preheat oven to 260 degrees. Stretch the dough and in some places pierce it with a fork, put it on warm baking paper (you can warm it in the oven) and bake for 6-10 minutes until golden brown.
Remove from the oven, pierce the bubbles, if formed, put the mushrooms, grated cheese and put back in the oven for 8-10 minutes, until the cheese is melted. Remove, drizzle with oil and serve immediately.
With shiitake, chanterelles and goat cheese
Cooking:
Mix flour, salt, sugar in the combine. Dissolve the yeast in warm water, leave for 5 minutes and add 3 tablespoons of oil. Pour all this into the flour (the combine should work and mix the mass), knead to smoothness for one minute.
Transfer the dough to a lightly sprinkled flour surface, add a little flour, if too sticky to your hands, and half a tablespoon of olive oil. Put the dough in a bag and leave it at room temperature for two hours. Remove the dough from the bag, knead a little, put it back in the bag and leave it alone overnight. In the morning, cut the dough into three pieces, freeze two until the next time, and put one on a floured board.
Simmer the mushrooms with three tablespoons of olive oil and salt for 5 minutes, remove from heat and cool.
Divide the dough into two more pieces, roll them into the same pancakes and put on baked flour paper. Grease each with butter, sprinkle with mozzarella and parmesan, spread mushrooms and dotted goat cheese.
You can bake both pizzas at the same time: in an oven heated to 230 degrees, hold each one on the top and bottom shelves for 8 minutes. If by this time the edges do not become brownish and crispy, keep it still in the oven. Remove, sprinkle with chopped green onions and serve.
